I'm picking up a 10 year old foster tomorrow, who has not been neutered.

I will, of course, check with the vet about any medical problems etc. that neutering at this age could cause, but I wonder if anyone out there has been through this.

Any advice etc. would really be appreciated!

Neutering is relatively quick and uncomplicated surgery. As long as he's in good health and has no contraindications to surgery/anesthesia, I doubt there would be a problem. With a senior, you'll probably want to request the pre-operative laboratory testing, etc., if they're optional extras in your vet's practice.
